Introduction to Indian Curries
A true Indian curry is not made with yellow curry powder. Freshly ground spice mixtures called masalas are the secrets to an authentic Indian curry. Curry is not added to a dish, it just is. Each dish will focus on how spices are blended to make a curry. We will learn to make 1. Saag Chicken- Chicken and spinach cooked in fresh spices. 2. Split Chickpeas cooked with ground spices like mustard and fennel. 3. Potatoes roasted on a stove top with fresh cumin, cayenne and curry leaves. 4. Paneer (Indian cheese) in a ground cashew nut and bell pepper sauce. 5. Spicy Pineapple Curry.
