Spinach Pilaf

A box full organic spinach, half of which was used and the other half seemed like it was crying to be used. We both love spinach and  all the health benefits that comes with it – A carotenoid found in spinach fights prostrate cancer, ovarian cancer and excellent  for our bones. We try to have as much greens and vegetables as possible. Tonight the menu was to use left over cauliflower, one carrot, a little bit of peas and a lot of spinach.

Recipe: Spinach Pilaf

Ingredients

Onion – 1 small, thinly sliced
Oil – 2 T
Ginger – 1 tsp, minced
Garlic – 2 tsp, minced
Green Chilly – 2 to3
Unsalted Cashew nuts – 1/4 cup
Fennel seeds – 1/8th tsp
Cloves – 2
Cardamom pods – 2
Diced tomatoes – 1 3/4 cup
Spinach – 4 cups, loosely packed
Carrot – 1 , sliced
Cauliflower – 5 florets
Basmati rice – 2 cups
Water – 3 cups
Coconut milk – 1/4 cup
Mint – 1 T, finely chopped
Salt – to taste

Instructions

  • Heat pressure cooker or pot that you are going to use to cook the pilaf
  • Heat oil and sdd onions and saute on medium low
  • In a blender or food processor grind the ginger, garlic, green chilly, cashew nuts , fennel seeds, cloves, cardamom pods with about a couple of tablespoons of water to a smooth paste
  • Add the paste to the pot and saute, do not worry about the paste sticking to the pan. Cook for about a minute
  • Stir in the tomatoes and that will help deglaze the pan. Cook until the tomatoes slightly lose it’s shape
  • Add the Spinach, and cook for about 2-3 minutes.
  • Add rest of the ingredients one by one and check for seasoning.
  • If you are cooking on the stove top, bring it a boil and then reduce the stove medium low, close with a lid and let it cook until the water has evaporated and rice is cooked
  • Serve with yogurt or a spicy masala omlette.

Use green chillies with caution. We wanted our pilaf hot :)

    One veg my daughter loves is spinach and this pulav looks so yumm.

    Looks delcious. Rice dishes should be little bit spicy, bland rice is not good to eat. Spinach addition is healthy. Good one.
